King Ranch Chicken Casserole

Ingredients:

  • 3 Cups Shredded Chicken
  • 15 Corn Tortillas (Cut into thirds or quarters)
  • 3 Cups Shredded Mexican Cheese
  • 1 Can Black Beans (Without Salt, rinsed)
  • 1 Can Whole Kernel Corn (Without Salt, rinsed)
  • ¼ Cup Chopped Cilantro
  • 1 Can Petite Diced Tomatoes
  • 1 Can Cream of Chicken
  • 1 Poblano/Green Bell Pepper (Diced)
  • 1 Small Yellow Onion (Diced)
  • 1 TBSP Texas Spice Orange Pepper Seasoning

Directions:

  1. Pre-heat oven to 350° and spray down a 9×13” dish with non-stick cooking spray.
  2. While oven pre-heats, combine shredded chicken, black beans, corn, diced tomatoes, cream of chicken, diced pepper, onion, and Orange Pepper in a medium-large bowl.
  3. Using about half of the cut corn tortillas, cover the bottom of the casserole dish in an even layer. Spoon half of the chicken mixture over the top of the corn tortillas. Then, cover the chicken with an even layer of shredded cheese (using about 1 ½ cups). Repeat with the last half of corn tortillas, chicken mix, and shredded cheese.
  4. Once oven is done pre-heating, put casserole onto middle rack and bake for 30-35 minutes.
  5. Pull casserole out when done and allow to cool for 5-10 minutes before serving. Garnish with cilantro, sour cream, or salsa, if preferred.
